Vegan Gluten-Free Paleo Banana Bread

Whenever I get a sweets craving, my go-to is usually to make something from scratch from home! The only problem is that I usually like to avoid baking/cooking so unless the recipe is simple, I’m not making it. So, if you’re like me or you’re just looking for something quick to make, I wanted to share a super easy, do-able recipe for vegan, gluten-free paleo banana bread :) Hope you enjoy!

INGREDIENTS:

• 2 cups almond flour 

• 2 tbsp monk fruit powder 

• 1 tsp baking soda 

• 1 tsp cinnamon 

• 1/4 tsp sea salt 

• 2 large overripe bananas, mashed 

• 2 chia eggs (6 tbsp chia seed + 3 tbsp water)

• 1/2 cup coconut oil 

• 1 tsp vanilla extract 


INSTRUCTIONS:

1) Preheat oven to 350

2) Combine all ingredients together in a bowl.

3) Bake for 40-50 minutes
